EMPANADAS

(BY SIERRA MERCADO)

1 pound ground turkey
1 packet of sazon
2 garlic cloves, minced
2 tablespoons of sofrito
salt, pepper, garlic powder and adobo to taste
4 or 5 green olives (Goya brand)
1 8-ounce can of tomato sauce
2 packages of Discs, thawed (Goya Brand) You can find them in the frozen section of the grocery store.

Brown ground turkey in a pan. Once meat is browned fully, add the tomato sauce, minced garlic, sofrito, sazon, garlic powder, salt, pepper, adobo, and green olives. Stir together and let cook for 20 minutes. While this mixture is cooking, fill a frying pan halfway with vegetable oil. Heat oil on medium high. Then take your discs and put 1 spoonful of the poultry mixture on each disc. Fold disc in half over the mixture and with a fork seal the rounded ends. They should be in the shape of a half moon. Place each Empanadas in the heated oil and fry each side for 2 minutes or until golden brown. Serve hot. Makes 10 servings.
