PITAS WITH MARINATED CUCUMBERS

1 pound ground turkey or ground chicken
2 garlic cloves, sliced
1 tablespoon Italian dressing
2 tablespoons fresh chives, minced
3 tablespoons plain yogurt, nonfat
1 teaspoon Dijon mustard
1½ teaspoon honey
2 pitas
leaf lettuce
4 ounce package shredded cheddar cheese
2 ounce package alfalfa sprouts

Marinated Cucumbers:
5 pickling cucumbers, thinly sliced
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon sugar
A dash of dill, oregano, basil, parsley, salt and white pepper

• To make marinated cucumbers: In a large bowl, with a whisk, mix oil, lemon juice, sugar and seasonings until well blended. Add in cucumbers and mix until cucumbers are well coated. Refrigerate for at least 1 hour.
• In a large pan, cook ground poultry with garlic and Italian dressing until no pink remains. Place cooked ground poultry in a bowl and add chives, yogurt, mustard and honey. Mix until well blended. Refrigerate until cooled (about 1 hour).
• To assemble pitas: Cut pitas in half. Fill each half with a green lettuce leaf on the bottom. Add ground poultry mixture, then marinated cucumbers. Top with cheddar cheese and alfalfa sprouts.
• Makes 4 servings.
